  • I Am So Thankful

     I KNOW!  I have so much to be thankful for!

    I woke up ready for Thanksgiving.
    I have finished all the prep slice and dice I can get done ahead of time. Some things just have to wait until the final prep.

    I’ve been eyeing that Turkey.. Still some frozen areas. I better help that along…
    Just so you know ahead of time,  I will not be using Pepper Spray on my turkey this year… . obviously there was NONE left on the shelves.
     
    Literally, every space on my cabinets is taken up with the serving vessels waiting to be filled with something….  with any items that item will need.

    Pies are out of the oven and cooling…

    It’s just no fun to have to stop and hunt something the day of….. It will be busy enough.
    Staging is my way of relieving the last minute stresses.
     
    I have some great seedy/grainy whole wheat bread is drying out and the ‘Happy Craisins’ are plumping in Christian Brothers.

    There is still the totes to be washed and ready because all this has to go to to another site..
    Sigh! … Didn’t need that change …( ’nuff said)  and there is the drink cooler to fill.

    The washer is humming with a load of fabric towels, the fruit and veggie trimmings are already in the composter and the 3/4 roll of used paper towels are out in the trash.

    Right now that Baileys is calling my name..
     Life is good!… I am thankful.

  • Holiday Chutney


                             I luv this recipe..

    I call it Holiday Chutney, but it is actually an East Indian condiment for sweet meats
             

    Holiday Chutney
    ——————-
     Into a larger pot,
    2  firm apples, leave some peal on one, core and cut 1/2″ pieces
    1 small onions, cut
    1 sm clove garlic, minced
    1/2 C raisins

    1/4 C brown sugar
    1 chopped Cardamon seed Optional. ( adds another layer of spice.. good place to use those once in a while spices.).
    1/8 tsp ground cloves
    1/8 ground cinnamon
    1/2 tsp ground ginger
    1/2 tsp salt
    1 tsp curry powder

    1/3 C apple cider vinegar
    1/4 C water
            
    Get the pot to a boil and simmer until the apples and onions are cooked soft.

    This recipe can ‘grow’ without adjusting the ratio.

    I usually Quadruple a few batches, putting the chutney into smaller gift sized fruit jars.

    These make excellent Christmas and hostess gifts

    It has become part of my Thanksgiving fare…I liberally pour it over a brick of Philly creme cheese and serve with fine crackers or baguettes .
    For a grown up party, I will add in a bit of Rum mmmmmmmmmmmmmmm

  • My pets are almost human

    There is F.Red the red beta, then you all know Dat Bugga and then there is Daisy the Yorkie and the Sister Kitty.

     Fred likes to sleep on his side.. has done that for over a year.
        

    Then there is Dat Bugga.. he like to swing and often swings himself as he naps..
     He gets more ‘swing’ if he pushes off as opposed to bobbing his head to make it ‘go.
     That leg hanging down is no accident. It is how he reaches the ground.

         This is also Dat Bugga’s sleeping bag… Doesn’t every cat you know have one?
        
         

    Then there is Daisy.. The absolute love of my life today with
    Sister Kitty.. one of the most ‘skitzy’ feral cats of all time has decided to make this her home..
    She and the Daisy have pal-ed up.
    Daisy is walking the Sister’ down to see what I am doing out back ( starting my winter garden).
    It was like Daisy was telling Sister to ‘hurry up!’ She’s jump a few pavers, wait. and look around until Sister would catch up.

    They all  look me up when it is ‘Time”( to eat.)
